I was surfing the net today and came upon a old favorite blog of mine, Kalyn’s Kitchen.  When I thought I was diabetic a year or so ago I found this site and it helped me a lot in finding yummy recipes.  One of the things I found there that I’ve stuck with is almond flour which I’ve used since instead of breading for my meat.  This site also reminded me of the time a few years ago that I tried the South Beach Diet.  I actually really, REALLY liked it.  I had great results.  I was never hungry or feeling like I was missing out on things.  So, I’ve decided….

Drum roll please…

I’m going to focus South Beach friendly.

My cupboards are bare.  My freezer is pretty safe (some frozen fruit but that’s about it — other than the last bit of chocolate ice cream that I’ll eat tonight).  My fridge, well, let’s say I could sleep in there it’s so empty (plus it’s hot today so that sounds pretty appealing).

I will look through the pantry and stuff later (either tonight or tomorrow) and give some stuff to my sister (I know there’s some white rice in there) so it’s a little easier on me.  Work will be a little hard (this is one reason I HATE that I’ve moved my office) but I’ll just have to do it.  The funny thing is I don’t even LIKE white rice — I prefer quinoa or no rice and I know it’s not good for me so why the heck do I have an entire Tupperware container of it???

So, this week will be:

What’s funny is that THESE are my favorite foods.

The trick is going to be making sure I make lunch so I don’t send my assistant out to pick something up for me.  I also need to be sure to pack some snacks so I don’t eat the yummy stuff in the office.

I also need to come up with a GOOD SBD friendly coffee that will keep me from my favorite coffee stand.
